Red amaranth has a strong flavor; it is similar to mustard but not as spicy. Quality is more in any dish that requires fresh greens – or in this case red! Striking colors make it an excellent decoration and a nice addition to food.
Red amaranth is a very small, tender microgreen. Warmer growing conditions suit it. Find a nice warm place to germinate and grow. It can also be sensitive to too much direct light. Red amaranth does not grow tall, so expect very tiny stems that are best harvested close to the root line and washed well.
Red amaranth is a high-protein microgreen with stunningly bright red and magenta tones. This type of microherb can be used in salads or many oriental dishes.
